Veggie Turmeric Ginger Soup

Prep time: 15 minutes

Cook time: 45 minutes

Total Time: 1 hour

Serves: 8


Ingredients:

  • 3 tbsp ghee

  • 1 sweet onion, chopped

  • 4 leeks, white pairs chopped

  • 3 medium carrots, chopped

  • 6 baby potatoes, chopped

  • 4 medium tomatoes, chopped + juice

  • 2 cups mushrooms

  • 1 cup green beans

  • 4 cinnamon sticks

  • 1 cup raw cashews

  • 1 tbsp cumin seeds

  • 1 tbsp coriander seeds

  • 1 tsp ground turmeric

  • 1 slice of ginger, be generous

  • 3 dried bay leaves

  • 6 cups bone broth

  • 1 can coconut milk

  • mineral salt


Directions:

  • In large pot over high heat, warm up the ghee + onions + leeks + mineral salt. Stir until golden

  • Add in all the veggies + spices

  • Reduce heat to medium and cook for 15 minutes, uncovered

  • Reduced heat to low, add coconut milk, simmer for 30 minutes


Enjoy with a side of sourdough toast!
