Ingredients:
3 tbsp ghee
1 sweet onion, chopped
4 leeks, white pairs chopped
3 medium carrots, chopped
6 baby potatoes, chopped
4 medium tomatoes, chopped + juice
2 cups mushrooms
1 cup green beans
4 cinnamon sticks
1 cup raw cashews
1 tbsp cumin seeds
1 tbsp coriander seeds
1 tsp ground turmeric
1 slice of ginger, be generous
3 dried bay leaves
6 cups bone broth
1 can coconut milk
mineral salt
Directions:
In large pot over high heat, warm up the ghee + onions + leeks + mineral salt. Stir until golden
Add in all the veggies + spices
Reduce heat to medium and cook for 15 minutes, uncovered
Reduced heat to low, add coconut milk, simmer for 30 minutes
Enjoy with a side of sourdough toast!
