Adapted from That Vegan Babe a quinoa breakfast or snack bake that is sweet and nutty. It takes 10 minutes to prep.
Your house will smell so warm and inviting! It is also toddler approved!!
INGREDIENTS
2 Bananas mashed
1 cup Quinoa
2 tbsp Chia Seeds
2 cups of milk of choice
2 tsp Cinnamon
2 tsp Vanilla
2 tbsp Maple Syrup optional - or add a few chopped dates
1½ cups fresh or frozen
For Topping
Yogurt of choice
Fresh Fruit
Nuts and/or seeds
Top with more warmed milk
INSTRUCTIONS
Add the bananas into a large baking dish and mash them well.
Next, add all of the ingredients on top, except for the fruit, and whisk well until everything is incorporated.
Add in the berries and make sure they are spread out evenly so there is sweetness in every bite!
Bake at 350f for 60-70 minutes, until the quinoa is cooked.
Add on your favorite toppings! I like to add on my vegan protein icing, fresh fruit and nuts, but vegan yogurt works as well!
