Nourishing Quinoa Bake for Postpartum Breakfast or Snack

Adapted from That Vegan Babe a quinoa breakfast or snack bake that is sweet and nutty. It takes 10 minutes to prep.


Your house will smell so warm and inviting! It is also toddler approved!!


INGREDIENTS

  

  • 2 Bananas mashed

  • 1 cup Quinoa

  • 2 tbsp Chia Seeds

  • 2 cups of milk of choice

  • 2 tsp Cinnamon

  • 2 tsp Vanilla

  • 2 tbsp Maple Syrup optional - or add a few chopped dates

  • 1½ cups fresh or frozen

For Topping

  • Yogurt of choice

  • Fresh Fruit

  • Nuts and/or seeds

  • Top with more warmed milk

INSTRUCTIONS

 

  • Add the bananas into a large baking dish and mash them well.

  • Next, add all of the ingredients on top, except for the fruit, and whisk well until everything is incorporated.

  • Add in the berries and make sure they are spread out evenly so there is sweetness in every bite!

  • Bake at 350f for 60-70 minutes, until the quinoa is cooked.

  • Add on your favorite toppings! I like to add on my vegan protein icing, fresh fruit and nuts, but vegan yogurt works as well!
